Mozzarella, Tomato and Basil Deliciousness

One of the little things that helps me to better enjoy the day-to-day grind is to eat yummy lunches. And you don't have to roast a hog on a spit in your backyard in order to accomplish this.

Two years ago my step-mom gave me a panini maker for Christmas. It has become an indispensible way of life.

 Each week when I grocery shop I buy a loaf of sliced, whole wheat french bread. Within this loaf lies redemption from the hustle and bustle of noisy children, my carpool schedule, and the unforgiving nature of our laundry pile.

Thinly sliced, fresh mozzarella. Thinly sliced tomato. Fresh basil. A dash of salt. No oil, butter or fat necessary. Grill the sandwich until it is perfectly toasted. Dip it in a small side of balsamic vinegar.
I promise you, the day never feels that hard if there is a homemade panini somewhere in the middle.

  2. I don't know that you'll ever see this, considering that I'm commenting long after the original post, but you brought back fond memories of times past, in another place; times that seem like yesterday, and yet forever ago. I miss our lunches, and I miss you, Lauren!
