Crostini

Crostini:  (meaning "little toasts" in Italian) is an Italian appetizer consisting of small slices of grilled or toasted bread and toppings. The toppings may include a variety of different cheeses, meats, and vegetables, or may be presented more simply with a brush of olive oil and herbs or a sauce.

Here's my dilemma: I don't really want to touch or cook food yet, but on the days when the nausea subsides I want to eat something good. I want to make it count. I never enjoy food so much as the days when I'm not feeling green, and that's where crostini comes into play! I saw it served as an appetizer on the cooking channel and I hit the pause button. Apples and Brie? Goat cheese and roasted peppers? Melon and prosciutto? Um, yes please!

Okay, so I can't eat all the cheeses right now (one of the other traumatic drawbacks to pregnancy) but I spent some time googling crostini recipes and there are plenty of terrific options. It's a five minute meal. You can include lots of fresh fruit or veggies. There is almost no mess involved. And you can slice the bread really thin so you don't eat an entire loaf a day and turn into a carb monster! What's the down side here, really?

Today I woke up feeling good. So, I had a sun-dried tomato and mozzarella crostini for first lunch. Then I had a cheddar and green apple crostini for second lunch. I'm thinking about olive oil, spinach and freshly grated parmesan for afternoon snack (there is no third lunch folks, you need to draw a line somewhere).
